Easy Way to get your kids to eat their veggies

When I can find the time, I love to bake. Despite my profession as a personal trainer and nutrition coach, I have a really hard time getting my teens to eat vegetables. I know shocking!😆


But vegetables and the nutrients they provide are still a necessary component in their diet. If this is true for you, try making them zucchini bread substituting applesauce for the oil, and either less sugar than the recipe calls for, or organic stevia in place of it. Here is my favorite zucchini bread recipe...


Zucchini Bread

This is my mom’s recipe and she has been making it for as long as I can remember.

Ingredients:

1 1/2 cups shredded zucchini (partially drain off liquid)

2 cups Pancake baking mix ( I use Bisquick Heartsmart  or even Gluten Free can be used if needed)

3/4 cup sugar (can use slightly less or Stevia)

1/4 cup unsweetened applesauce

3 eggs

1 teaspoon vanilla

2 teaspoons ground cinnamon

1 teaspoon ground nutmeg

1/2 cup chopped nuts and/or raisins (optional)

Heat oven to 350°. Grease bottom only of loaf pan, 9 x 5 x 3“. Beat all ingredients on low speed, scraping bowl constantly, 30 seconds. Beat on medium speed, scraping bowl occasionally, one minute. Pour into pan. Bake until toothpick inserted in center comes out clean, 50 to 55 minutes. Cool 10 minutes; remove from pan. Store in the refrigerator.

You can also just do this by hand which is what I usually do. Mixer is not really needed. 

It makes a quick breakfast or snack and an easy way to get a serving of vegetables in.
